Introduction

Once a month the ladies I run with get together to do some bigger-batch, healthy cooking of food that we can share. This recipe has less fat and less sugar than most we found. Ingredients

    2 cups cooked brown rice
    48 large cabbage leaves
    1 pound ground turkey
    2 pounds extra lean ground beef
    1 cup chopped onion
    1 can tomato soup
    1/2 tablespoon no-salt-added vegetable seasoning
    3 (16 ounce) cans seasoned tomato sauce
    3 tablespoons worcestershire sauce
    1 teaspoon garlic paste
    6 cups thickly-chopped carrots (optional and not included in nutrition info)

Directions

Freeze then thaw very large cabbage. Separate leaves. To soften the leaves, blanch for a few minutes in 1 cup of red wine vinegar boiling with approximately 6 cups of water in a large pot. Drain leaves and set aside.

Preheat oven to 350 degrees F (175 degrees C). Butter three 9x13 inch casserole dishes.

Cook meat and onion until meat is brown and onion is tender. Drain any fat, transfer to a bowl, cool slightly, and mix in cooked rice, 1 can tomato soup. Season with McCormicks no-salt-added vegetable seasoning.

In a separate bowl, mix tomato sauce and Worcestershire sauce.

Scatter carrot slices evenly over bottom of casserole dishes.

Spread cabbage leaves on a flat surface and place about 4 tablespoons turkey mixture in the center of each leaf. Fold edges of leaves over filling, then roll into logs. Place cabbage rolls seam side down in dish over carrots.

Pour sauce evenly over rolls.

Freeze for serving later or cover and bake 1 hour in the preheated oven. Remove cover during last 10 minutes of cook time. Allow to sit 5 minutes before serving.
