Introduction

a chicken enchilada with spinach and tomatoes and a sour cream enchilada sauce a chicken enchilada with spinach and tomatoes and a sour cream enchilada sauce
Number of Servings: 10

Ingredients

    3 cooked chicken breasts, chopped
    1 can no salt added tomatoes
    I medium onion, chopped
    I can ortega green chiles
    1 can Old El Paso enchilada sauce
    3/4 cup Kraft Shredded 2% Four Cheese Mexican
    3/4 cup fat free sour cream
    I package green giant frozen spinach no sauce (9 oz), thawed
    10 Mission whole wheat tortillas

Directions

Saute the onion and green chiles, add the tomatoes and spinach, then the chicken
Let simmer for 5 - 10 minutes
In a saucepan, combine enchilada sauce and sour cream. Stir and let heat for about 5 minutes, add cheese, stirring sauce continually for 1 minute
Take chicken mixture and place evenly into ten tortillas, wrapping them like a burrito
Place wrapped burritos into glass baking dish
Cover tortillas with sauce in pan
Sprinkle with cheese
Cover and bake at 350 degrees for 30 minutes

Makes 10 servings

    I liked it. The chicken part of the meal could have been saucier. I was very tempted to add the enchilada sauce to that part of the recipe as well. Perhaps that would make it better.
