I've ammended several different recipes into one glorious cheesecake! I've ammended several different recipes into one glorious cheesecake!Number of Servings: 12
Ingredients

Crust:
1 c ground almonds
1 egg white
1 tbsp xylitol
1 tsp ground cinnamon
1 tsp ground ginger
Cheesecake Filling:
16 oz cream cheese
1.5 c sour cream
2 eggs
2 tsp vanilla extract (or real bean is best!)
1/3 c xylitol sweetener (or splenda)
2 tbsp melted butter
Directions
Preheat oven to 325 degrees.
Crust: mix ground almonds, egg white, xylitol, cinnamon and ginger until crumbly. Press into springform pan. Blind bake for 10-15 mins until lightly browned. Remove from oven.
Mix cream cheese, sour cream and xylitol until well blended. Add in eggs, beating well. Then vanilla, and finally slowly pour in melted butter. Pour ontop of crust in springform pan, and bake for 35-40 mins. Keep oven door closed. Turn off heat....let sit a few more mins, then open door....let sit for a while before removing from oven. Then chill and serve with berries or whipcream or both!
