Ingredients

    410g can, tuna, drained and flaked
    1/2 cup grated low fat tasty cheese (divided)
    1/2 onion, finely diced
    1 lg yellow, or red capsicum, finely diced
    200g silverbeet or chard leaves, finely shredded
    1/4 medium cauliflower cut into florets, ,
    3/4 cup cottage cheese low fat (divided)
    2 Tbs grated Parmesan cheese
    3 lg tomatoes, thinly sliced
    1/4 cup loosely packed basil leaves, or parsley (optional)
    Seasonings of choice - eg - lemon or orange zest, lemon thyme, lemon myrtle, seafood sprinkle, salt free spice mix etc)

Directions

Preheat oven 165C
Place a layer of thinly sliced tomatoes on the bottom of a greased ovenproof dish, retaining a few slices for garnish on the top.
Microwave the silverbeet until tender, drain well
Spread over the tomato slices carefully
Microwave the capsicum and onion until tender, drain well,
In a medium bowl combine tuna,1/4 cup tasty cheese, and 1/4 cup cottage cheese with seasonings of choice. Add the capsicum and onion mixture and mix well,
Spread over the silverbeet. pressing down gently to level.
In microwave container cook cauliflower , adding 2 Tbs water, cover and cook on High 4 min or until cooked, shake dish and stand 5 min. Drain very well
Place in a food processor
Add 1/2 cup cottage cheese, and parmesan cheese to cauliflower. with seasonings and process until smooth (like mashed potatoes).
It may be necessary to add up to 2Tbs water to the cauliflower if the mixture looks too dry..
Spoon over tuna mixture, arrange reserved tomato slices and basil leaves (or parsley)over and sprinkle with remaining tasty cheese.
Bake in preheated oven at 170C for 25 - 30 minutes until lightly golden and heated through.
Stand at least 10 min before serving,
