Ingredients

    1 tbsp olive oil
    1 onion, finely chopped
    2 garlic cloves, finely grated
    pinch of turmeric
    pinch of garam masala
    2 inch piece of ginger, finely grated
    1.5 cups red lentils
    grated zest and juice of 1 lemon
    3.5 cups hot vegetable stock
    2 tomatoes, peeled and chopped
    handful of fresh cilantro, finely chopped
    sea salt and freshly ground pepper to taste

Directions

MAKES 4 SERVINGS

1. Heat the oil in a frying pan over low heat. Add the onion and a pinch of salt, and cook for 5 minutes until soft. Stir in the garlic, ginger, turmeric, and garam masala, and cook for 1 minute.

2. Stir in the lentils and lemon zest, pour in the stock, and simmer for about 20 minutes until the lentils are tender.

3. Season well with salt and papper, and stir in the lemon juice, tomatoes, and cilantro.

Serve hot with naan or rice.
