Introduction

A healthy, hearty, filling meal! A healthy, hearty, filling meal!
Number of Servings: 6

Ingredients

    2 tsp Garam Masala Indian Spice Mix
    2 Tbsp olive oil
    1 cup chopped onion
    1 cup diced celery
    1 cup diced raw carrots
    1 cup dry lentils
    2 cups diced yukon gold potatoes (I use yukon gold because the texture is really nice in this)
    2 cups canned diced tomatoes (if you can stand the heat, Rotel are nice!)
    4 cups vegetable or chicken broth
    salt and pepper to taste

Directions

Heat oil in a large skillet, add garam masala and stir until fragrant...add onion, celery and carrots and saute until onions are translucent about 5 minutes.
Add lentils and potatoes and stir to coat with seasoning mixtue. Stir in tomaotes and broth and salt and pepper to taste.
Bring to a simmer and reduce heat to medium-low and cover and simmer for 20 minutes stirring occasionally until potaotes and lentils are tender.

Makes 6- 1 cup servings
