Ingredients

1 wheat pita bread
1 oz. shredded cheddar cheese
2 large mushrooms chopped
1 tsp onions chopped
1 tbsp (.5 oz) tomato sauce
Basil/Oregano to taste, fresh or dried
Directions
1. Preheat oven to 350 degrees.
2. Cover a baking sheet with aluminum foil.
3. Lay the pita bread on top of the foil.
4. Drop the tbsp of tomato sauce in the center of the pita and swirl it out to the edges, leaving a small "crust" that is sauce-free.
5. Sprinkle on the chopped mushrooms and onions. Also add any dried or chopped fresh herbs, such as basil or oregano.
6. Cover with shredded cheese.
7. Put in oven for approximately 5-10 minutes, or until cheese is brown and bubbly.
8. Remove, cut, & serve!
At only 304 calories, this is a delicious alternative to take-out pizza, plus it is super quick and easy to make. We use Cabot Seriously Sharp Cheddar because of its pungent flavor, but feel free to experiment with your cheese and vegetable selections. Asparagus heads, spinach leaves, whole basil leaves, and zucchini are all delicious on top as well. Enjoy!
