Set it and forget it! This is delicious and it's easy to tailor to your liking. Choose mild taco seasoning and salsa and omit the jalapenos if you don't like spicy food (or substitute green bell pepper for the jalapeno). Choose medium/hot taco seasoning and salsa if you like spicy food. Even sprinkle some dried chili flakes into the slow cooker if you want added heat.This recipe makes enough to serve for a crowd but is easy to cut in half and just use 1 tenderloin.

Ingredients

2 pork tenderloins (about 2 1/2 lbs.)
1 1/2 packets taco seasoning
1 medium yellow onion, chopped
1 cup salsa (8 oz.)
1 sm can (4 oz.) diced green chillies
2 jalapenos, sliced
1 14 oz. can black beans, rinsed and drained
Makes 16 servings.
Directions
Lay 2 trimmed pork tenderloins (approx. 2 1/2 lbs.) in the bottom of the slow cooker. Pour the taco seasoning over it. Then add the onion, chillies, jalapenos, and salsa. Cover and cook on low for 4 hours. Using 2 forks, shred pork and add the black beans. Stir everything to combine and switch to "warm" for 1 more hour.
