Ingredients

    1 cup uncooked brown rice
    2 cups water
    2 chicken boullion cubes
    1-3 tsp chipotle chile pepper (powder) or 1 diced chipotle in adobo sauce
    1 large tomato, diced
    1 yellow squash, cubed
    Fresh salsa to taste

Directions

Combine rice, water, boullion and chipotle in saucepan. Bring to boil; cover and reduce heat. Simmer 45-50 minutes or until rice is tender and liquid is absorbed. While rice is cooking, steam the squash. Combine with cooked rice. Top with diced tomatoes and fresh salsa to taste. Makes approx 4 1-cup servings.
