Introduction

Good lower fat alternative to banana bread. Very moist and a favorite of the whole family. Good lower fat alternative to banana bread. Very moist and a favorite of the whole family.
Number of Servings: 12

Ingredients

    1 large egg
    1/2-1 banana mashed
    2.5 Tablespoons lowfat milk
    ½ Cup applesauce
    2 Cup Flour
    1/3 C. brown sugar
    1 T. baking powder
    1 teaspoon salt


Directions

Heat oven to 400. Line muffin pan with papers. Beat together egg, milk, brown sugar, applesauce and banana. Stir together dry ingredients and add them all at once just until flour is moistened (batter will be lumpy). Fill muffin cups about ¾ full. Bake until golden brown, about 20 minutes. Immediately remove from pan. Makes 12 muffins.

    they taste ok. i used paper muffin cups, and they stuck. next time i will spray the cups with pam. i will probably make them again, because they are low calorie. - 10/3/09
