Introduction

This is filling and tasty! This is filling and tasty!
Number of Servings: 1

Ingredients

    1 large egg
    1 whole wheat tortilla (I use Boston low carb)
    1/2 cup chopped fresh spinach
    1 TBSP chopped red onion
    1 TBSP chopped green pepper
    2 TBSP diced ham
    1 tsp Mrs Dash Fiesta Lime Seasoning (more or less depending on taste)
    1TBSP reduced fat cheddar cheese
    1/2 TBSP taco sauce

Directions

Mix egg in bowl. Add chopped spinach, onion, green pepper, diced ham and seasoning. Mix well. Spray fry pan with a little pam, pour in egg mixture. Scramble until cooked through. Should only take a minute or two. Heat tortilla in microwave for 15 seconds, place cheese on tortilla, place egg mixture on top of cheese and top with taco sauce. Wrap up and eat.

Makes one serving.
