Ingredients

    Asparagus, fresh, 1 cup
    Onions, raw, .33 cup, chopped
    Mushrooms, fresh, 2 cup, pieces or slices
    Egg, fresh, 2 large
    *Egg white, 4 serving
    Gouda Cheese, 4 oz
    Salt, .25 tsp
    Pepper, black, .25 tsp
    Fresh Chives, .5 tbsp chopped
    Parsley, dried, .5 tbsp

Directions

saute onions - 2 mins
add mushrooms and asparagus, cook until asparagus is aldente
combine eggs, egg whites, 1/4 cup cheese, salt, pepper and herbs, mix well.
put sauted veggies in bottom of a 8 inch pie pan
pour egg and cheese mixture over it, allow it to settle.
sprinkle remaining 1/4 cup of cheese over top
bake at 350 for 30 mins or until eggs are set in center and cheese has melted.

    Really good. Thanks for the recipe. Might add Parmesan, zucchini, more onion, water chestnuts and another egg. The top might be feta or Swiss next time. Definitely would make again - 3/2/19

    Incredible!
    I used Meunster cheese since that is what I had on hand. And I added basil and garlic powder. I didn't have mushrooms so I probably used half an onion instead of the third mentioned. It turned out great and it was so delicious. Thanks for a great recipe. - 4/5/12

    This was so easy to make and the flavor was excellent! (I couldn't find Gouda though and substituted shredded parmesan ... excellent!) - 6/6/07
