Introduction

use up left overs, or mix and match different veg to make a differnt dinner or leave for lunch the day after....... use up left overs, or mix and match different veg to make a differnt dinner or leave for lunch the day after.......

Ingredients

    onion
    potato
    garlic
    spinach
    ham (meat)
    eggs 5
    salt and pepper
    mixed herbs

Directions

cut onion, potato (small) and mince garlic, fry until starting to soften, then add spinach and wilt.

mix eggs, seasonings and ham, (if using)

mix 2 mixtures together,( make sure spinach is squeezed well, otherwse it takes a lot longer to cook as water keeps it from setting)

put into muffin tins or into a loaf tin, add cheese to top if wanted.

cook in oven for 45 minutes at 180-200c

or until golden brown.

turn out and leave to sit for 5 mintues if using the loaf tin as it helps it set.
