Ingredients

Turkey:
1 lb ground turkey
1/2 cup finely chopped onion
2 garlic cloves, minced
2 canned chipotle chilies in adobo, seeded and chopped
2 tbsp chopped cilantro
1 tsp kosher salt
Chili:
2 tbsp oil
2 c chopped onion
2 garlic cloves, minced
2 green peppers, diced
1 red pepper, diced
1 sweet potato, peeled and diced
1 1/2 tbsp chili powder
1 tsp cumin
1/2 tsp oregano
1/2 tsp cinnamon
1 1/2 tsp kosher salt
1 28-oz can whole tomatoes, drained and chopped
2 15-oz cans on kidney beans, rinsed and drained
1 15-oz can black beans, rinsed and drained
1 c frozen corn
1/4 c chopped cilantro
Directions
Combine turkey ingredient. Set aside.
In a large pot, over medium heat, heat oil and add onion. Sautee until softened, 8-10 minutes. Add garlic, peppers and sweet potato. Saute for a few minutes.
Add spices and stir constantly for 30 seconds. Add meat and stir until no longer pink, 8-10 minutes.
Add salt, tomatoes, beans, corn and cilantro. Simmer for 25-30 minutes, until thickened and flavors blend. Test for seasonings and serve with choice of toppings.
