Ingredients

    6 boneless, skinless chicken thighs
    1 tbsp canola oil
    Taco Seasoning (less sodium)
    4 cups (2 cans) Mexican Stewed Tomatoes (undrained)
    2 cups (1 can) Pinto Beans (drained and rinsed)
    Frozen vegetables (14oz bag) (roasted corn, peppers, black beans and onions)

Directions

Coat thighs in 1/2 of taco seasoning. Fry until brown in hot oil. Combine all other ingredients separately. Add to chicken. Bring to boil. simmer for 10 more minutes
