Gravies are a nono...until now! I use this for a vegetarian alternative for large parties and on an almost biweekly basis for other meals that suit the comfort of a rich sauce. Ingredients

1 small onion, minced
2 tbsp olive oil
1 or 2 cloves of garlic, minced
1 lb (at least) of fresh mushrooms
I use a variety crimini, shantorelles, button, shitaki
4 cups chicken or preferrably a vegetable stock
1 tbsp worchestershire sauce
2 tsp tamari soy sauce
corn starch or flour to thicken (not too much)
Directions
Mince onion and garlic and saute in a large saute pan in olive oil until very soft.
Add mushrooms and cook until they are soft and wet.
Add stock and cook gently for about 10 minutes
Add tamari and worchestershire sauce and stir
Add corn starch or flour that's been shaken with a little water to thicken.
Heat thru and enjoy over lean pork or vege stock mashed potatoes or as an addition to thanksgiving or christmas dinner.
ENJOY!!
Makes 8 1/4 c. servings or enough for a large family dinner to please the vegetarians in the bunch
