Introduction

Ingredients

    2 cloves garlic, smashed
    1/4 tsp. dried thyme
    1 bay leaf, left whole
    1 tsp salt
    1/4 tsp red pepper flakes
    1/2 cup lowfat buttermilk
    1 pound chicken tenders
    1 1/2 cups cornflakes, crushed to medium sized crumbs
    nonstick cooking spray

Directions

Preheat oven to 400 degrees. Line a baking sheet with aluminum foil and spray with nonstick cooking spray. In a medium bowl, combine the garlic, spices, and buttermilk. Add the chicken and turn in the marinade. Cover and refrigerate 1 hour. Place cornflake crumbs on a plate. Drain the chicken. Turn chicken in cornflake crumbs until coated, gently pressing crumbs into chicken if necessary. Place on prepared baking sheet in a single layer. Bake at 400 for 15 minutes or unti firm. Serves 4. You can also use nonfat buttermilk, but I didn't have any.

    Very Good
    Very good! I'm trying to eliminate salt so I used mrs.dash instead, but I think next time I'll try it with the salt since it's very little anyway. YUM!!! - 6/22/11
