Ingredients

    10 Cups low-sodium vegetable broth
    1 cup chopped carrots
    1/2 cup chopped turnips or swede
    2 leeks, rinsed well and chopped
    1 cup chopped onion
    1 cup dried lentils
    1 cup dried barley
    30g tomato paste
    1 tsp olive oil

Directions

Heat the olive oil in a heavy casserole pan and add the carrots, leeks, onion, and turnip and fry until the onions are soft. Add the broth, lentils and barley and simmer, stirring occasionally, for one hour. Add the tomato paste and salt and pepper to taste. Serves 6.
