Number of Servings: 6

Ingredients

    2 tablespoons canola oil
    1 med. onion finely chopped
    1 15 oz can diced tomatoes
    3 teaspoons of corlander
    11/2 teaspoons cumin
    1/4 teaspoons garam masala
    1/4 teaspoon turmeric
    1 15 oz can chickpeas-rinsed and drained
    1 10 oz chopped frozen spinach

Directions

1. Chop onion, and red, yellow or orange peppers (these are very good roasted and skinned).
2. Add oil to skillet and heat over medium high heat. Add onions and peppers. Cook until edges of onions start to brown, about 4 minutes.
3. Stir in tomatoes and spices. Lower heat to medium and cook for 3 minutes.
4. Add chickpeas and heat thru.
5. Add spinach and cook another 5-6 minutes.


Makes 6 1/2 cup servings

    I liked this recipe, but found the flavor a bit bland so I will be playing around with the seasonings next time. I added crushed red pepper before serving to spice it up. - 6/9/10

    Incredible!
    Didn't have turmeric, but used 2 tsp garam masala total. It was still missing something, so I added 1/2 tsp each of curry and ginger powder. This was a really easy recipe, and the flavors are much more pronounced the next day. I will definitely be making this again. - 5/25/10
