Ingredients
3 Cups Whole wheat flour
1 cup Brown sugar
4 tsp Baking powder
1/2 tsp Salt
2 tsp ground nutmeg
2 Large eggs
1 1/2 cups milk (2% used in calculation)
2 Tbsp butter melted
1 Cup butternut squash purree
Directions
Preheat oven to 400 degrees
Mix dry ingredients in one bowl and wet ingredients in another
Add wet ingredients to dry ingredients and stir until combined. Do not over mix.
Spoon batter into muffin cups and bake for 20-25 min Or until toothpick inserted in center comes out clean.
Remove from Muffin tin and cook on rack.
I love to dig into mine while they are still warm but to each their own.
