Introduction

Ingredients

    1.5 tbsp olive oil
    1 onion, sliced (about 150g)
    1 green chilli
    3 garlic cloves
    1" piece ginger
    1 tsp turmeric
    2 tsp garam masala
    salt and pepper
    1 tbsp brown sugar
    1 tbsp double-concentrated tomato puree (about 50g)
    0.5 can chopped tomatoes

    1 tsp olive oil
    4 chicken breasts, diced
    150g natural yogurt
    a few curry leaves (optional)

Directions

Fry onion in 1.5 tbsp oil. Slice garlic, chilli and ginger and add to pan. Cook until starting to soften.

Add turmeric, garam masala and sugar and mix well. Make sure heat is not too high and keep stirring, as this mixture will be quite dry and you don't want to burn it.

Add tomato puree and mix in.

Add canned tomatoes and mix in. Simmer for a few minutes. Then transfer the sauce to a blender and blend until smooth.

Cook chicken in 1 tsp oil until sealed all over. Add tikka masala sauce and curry leaves. Simmer until chicken is cooked through - about 10 minutes.

Stir in yogurt (this will cool the spiciness and add creaminess, so add more or less according to taste), heat through and serve.

    Very tasty and better than the oily expensive Masala sauces one buys in a jar. I added more ginger and would add less sugar next time because the onions sweetenned it. - 1/8/10
