Ingredients

    4 Large Baked Potatoes
    2/3 cup Butter
    2/3 cup Flout
    6 cups Milk, nonfat
    3/4 tsp. Salt
    1/4 tsp. Pepper
    4 Green Onions, chopped & Divided
    12 Slices Bacon, cooked & crumbled
    1 1/4 cups Shredded Cheddar, divided
    8 oz. Sour Cream, reduced fat

Directions

Wash potatoes and prick several times with a fork, bake at 400 degrees for 1 hour or until done, let cool. Cut potatoes in half and scoop out pulp, set aside and discard skins. Melt butter in heavy saucepan over low heat: add flour stirring until smooth. Cook 1 minute, stirring constantly until mixture is thicked & bubbly. Add potato pulp, salt, pepper, 2 Tbsp green onions, 1/2 cup bacon, 1 cup cheese, and milk. Cook until thoroughly heated and stir in sour cream. Add extra milk if needed for desired consistency. Serve with remaining green onions, bacon, & cheese.
