Ingredients

    4 (4-5 oz) boneless, skinless chicken breasts
    2 cups salsa, flavor of your choice, divided
    1 cup Kraft 2% four cheese mexican blend shredded cheese
    1 cup uncooked long grain brown rice

Directions

Prepare brown rice according to packge directions. During last 10 - 15 minutes of cooking time add 1 cup of salsa.
While rice is cooking, pre heat oven to 350 degress. Spray 9" baking dish with cooking spray. Place chicken in baking dish. Pour 1 cup salsa over chicken and top with shredded cheese. Bake for approx 20 minutes until chicken is done and cheese is melted and bubbly. Serve over cooked rice.
Makes four servings (1/2 cup rice and 1 chicken breast each serving).
