Introduction

We love this, but I'm looking for a way to make it lower fat. Very tasty. Add a dinner roll on the side and you have a meal in my book. Ingredients

    1 whole chicken breast, cooked and diced or slivered
    1/2 head cabbage (or small head) shredded fine
    2 green onions, chopped fine
    2 pkg. (3 oz.) chicken flavored Ramen noodles, broken up
    2 T. sesame seeds (optional)
    2 oz. slivered almonds
    1 T. butter

    Dressing
    2 pkg. noodle seasoning mix
    6 T. sugar
    1/2 C. vegetable oil
    6 T. rice or wine vinegar
    1/2 tsp pepper

Directions

Mix chicken breast, cabbage, onions and noodles. Toast almonds and sesame seeds in butter. Add to cabbage mixture. Mix dressing ingredients together and pour over cabbage. Toss. Refrigerate several hours before serving.

Note: I use some stevia and a Tablespoon or two of water instead of all sugar. I'd love to find a way to get this flavor with less oil. If someone finds a way, please post here. I'd love to know.

Makes approximately 12 1/2 cup servings.

    Newman's Own has a light oriental dressing that you could use instead. It is really good. - 2/20/12
