Introduction

These are versatile little fritattas that can be made ahead for busy weekday breakfasts, or great just for snacks. These are versatile little fritattas that can be made ahead for busy weekday breakfasts, or great just for snacks.

Ingredients

    6 oz Jimmy Dean Sausage (You could use turkey sausage, I just didn't have any on hand)
    1/3 c. chopped onion
    3 c. Egg Beaters (equivalent to 12 eggs)
    1/4 c. grated parmesan cheese
    salt & pepper to taste

Directions

Cook sausage and onion together in non-stick skillet. While that is cooking, mix egg beaters, cheese, salt & pepper. Spoon sausage mixture into lightly sprayed (or use nonstick) muffin tin. Chopping sausage mixture with hand chopper makes it easier to spoon) Fill 3/4 of the way up with egg mixture. Bake at 375 for about 20-25 minutes. You can add mushrooms, squash, peppers or other vegetables to the sausage mixture to change this recipe up. Also, great when topped with a little salsa.
