Number of Servings: 9

Ingredients

    1 1/4 c flour
    3/4 c sugar
    3/4 c canola oil
    2 tsp ground cinnamon
    1 tsp baking soda
    2 tsp vanilla
    1/2 tsp salt
    1/2 tsp nutmeg
    2 eggs
    1 1/2 c shredded carrots

    3 oz light cream cheese
    1/4 c butter
    2 c powdered sugar
    1 tsp vanilla

Directions

* Combine 1st set of ingredients except carrots
* Stir in carrots
* Bake 350 30-35 minutes
* Cool completely
* Beat cream cheese and butter until smooth
* Slowly add powdered sugar and vanilla
* Spread on cake
