Introduction
These babies are lower in fat AND much lower in sugar than many other quick bread recipes. Add in the fact they are made with whole wheat pastry flour and are vegan and you've got a tasty, healthy breakfast or snack. Ingredients

2 c. whole wheat pastry flour (make sure it's PASTRY and not bread flour. Pastry will make fluffy muffings, bread will make bricks!)
1/4 c. sucanat (or other granulated sweetener)
3 small very very ripe bananas
2 Tbs. organic canola oil
1 Tbs. ground cinnamon
1 Tsp. ground nutmeg
1 Tsp+ real vanilla extract (use the good stuff, it's worth it!)
1 Tsp. baking soda
Directions
Mash the bananas (really make sure they are ripe. The riper the bananas the more tasty and naturally sweet the muffins. Mmmm!) and add the sweetener and oil. Mix well.
Sift in flour, baking soda, spices. Add vanilla. Mix until flour is blended (do not beat/overmix).
Fill muffin wells about half full. This may seem like a very small amount of batter per muffin but they rise and get really fluffy. :) Bake at 350 until a toothpick inserted into the muffins comes out clean. When you can smell the super delish banana spice aroma in your living room, give 'em a check. It should take about 10-12 minutes.
Let them cool a bit before nomming (I know, this part's hard!) or they'll stick to the wrappers. 'Course, you can always just chew the muffin bits off the wrapper in the off chance you are hasty (like me).
