Introduction

Number of Servings: 8

Ingredients

    1 medium onion, coarsely diced
    1/2 large red pepper, coarsely diced
    2 teaspoons of olive oil
    1 can of diced tomatoes (can use the flavored ones with green peppers and onions if you wish). Do not drain
    1 can of black beans, drained and rinsed
    1 cup of frozen corn kernels
    1 cup of brown rice
    2 cups of chicken broth
    cumin
    chili powder
    cayenne pepper
    **seasoning is to taste

Directions

Heat a medium sized sauce pan, and add olive oil. Saute onions and peppers until tender-crisp. Add rinsed beans, canned tomatoes, brown rice, chicken broth, corn and seasonings. Bring to a boil. Cover and turn to low and cook until the rice is cooked and the liquid is absorbed, approximately 20 minutes.
