Introduction

Ingredients

    4 Peaches, halved (I used white but any should work)

    7 fresh figs, quartered
    3 large strawberries, chopped
    Dash of Allspice
    Zest of a small Lime
    About a cup of Basalmic Vinegar
    about 4 teaspoons of sugar
    1/2 teaspoon vanilla

Directions

Makes 4 servings of two halves.

Heat a saucepan over medium heat. Add figs, strawberries. A dash of salt is a good idea. Once fruit is slightly warmed add sugar, allspice and vinegar. I turned up the heat till it started to boil than reduced it to a simmer.
Reduce until sweet and slightly thicker. Turn off heat.
Add lime zest and vanilla stir well.

Grill peaches face down til lightly charred and soft. Place in a dish, furry side down and spoon the sauce into the pit holes.

You can strain the reduction if you don't like the chunks. Top with lowfat yogurt for a creamy treat. Or even a little vanilla ice cream for a splurge!

    I used dried figs which I rehydrated in hot water before making recipe...I also used this more or less like a chutney (chopped all the fruit into med chunks and poached it in the balsamic...didn't add the sugar)...putting it on top of chicken and pork...WOW!!! Thanks! - 2/24/11
