Introduction

Ingredients

1/4 cup Red Onion thinly sliced
1 Garlic Clove minced
2 tbs Lemon Juice or champagne vinegar
1 1/2 package of fresh spinach (1lb)
1 cup mushrooms sliced (any type you which)
1 cup tomatoes diced
2 tbs parmesan cheese
1tbs Dijon Mustard
6 strips morning star farms bacon (fried) real bacon can be used.
Pam- olive oil cooking spray.
Directions
1. Spray a large frying pan with some Pam cooking spray.
2. Fry Veggie Bacon / Real Bacon until crispy and brown.
3. Without discarding oil remove bacon from pan once crispy.
4. Place Bacon on a plate with a napkin to rest.
6. Place thinly sliced red onions in the pan with the oil from the bacon. Saute until transparent on medium heat. ***If you are using Veggie Bacon you would need to spray your frying pan again.
7. Place minced garlic clove and mushrooms in the pan with red onions.
8. Add 2tbs lemon juice or champagne vinegar to the pan.
9. Add Spinach to the pan for ONLY 20seconds. ***Spinach will wilt if it cooks tooooo long. Use cooking tongs to continually mix the spinach with other ingredients in the frying pan for ONLY 20 seconds.
10. Place Spinach mixture into a serving bowl. Add tomatoes, dijon mustard and parmesan then toss with cooking tongs.
11. Serve and ENJOY!!!
