Ingredients

1 slice pancetta
1 jar Vlasic Old Fashioned Sauerkraut
1 tbsp allspice
1/2 cup chopped onion
1/2 cup chopped celery
1 tbsp bacon
1 tsp light brown sugar
1 tbsp splenda
1 tsp black pepper
Optional: Caraway seeds
Directions
Preheat oven to 350.
Brown pancetta, onions, and celery in cast iron pan with the black pepper.
Drain sauerkraut, but do not rinse, and set aside.
In a small dish mix the brown sugar, splenda, and allspice and set aside.
Once kraut is fully drained and the onions, pancetta, and celery are browned, fold in the kraut. Toss until evenly mixed, pat down and top with crumbled bacon and brown sugar mixture.
Bake at 350 for an hour to an hour and a half.
Makes 11 half cup servings.
