Introduction
This is a modified "Low Glycemic" version of AAANNE'S "Whole Wheat Spiced Pumpkin Pancakes" recipe. This is a modified "Low Glycemic" version of AAANNE'S "Whole Wheat Spiced Pumpkin Pancakes" recipe.Number of Servings: 10
Ingredients

1 cup whole wheat flour
2 tsp. baking soda
1 tsp. pumpkin pie spice
1 egg
1 cup Almond Breeze Original Unsweetened Beverage
2 scoops of Jay Robb's Vanilla Protein Powder
Directions
1. Mix dry ingredients first
2. Add almond milk and egg to flours and mix well.
3. Add pumpkin to mixture and mix well. (If batter is too thick, add small quantities of almond milk until batter is correct consistency for pancakes).
4. Spoon 1/4 cup of batter onto non-stick pan or griddle and brown on both sides.
Note: I use Pam butter flavor cooking spray to prevent sticking.
I serve with Trader Joe's All Natural Sugar Free Syrup.
Makes apprx. 10 pancakes.
