Introduction
My grandmothers recipe for Mac & Cheese...what COMFORT FOOD! My grandmothers recipe for Mac & Cheese...what COMFORT FOOD!Number of Servings: 6
Ingredients

8 oz whole wheat pasta( cooked and drained)
2 Tbls butter
2 Tble flour
2 cups grated sharp cheddar
1/2 cup grated parmesam
2 cups skim milk
1/2 teas dry mustard powder
1/2 teas paprika
1/2 teas cayenne(more or less to taste)
salt(for pasta water)
Directions
Cook pasta in boiling salted water according to directions( I use penne, elbow, or shells) Drain and place in 8x8 casserole dish. Set aside. Preheat oven to 350.
Meanwhile in a large non stick pan- melt butter- add flour to mae paste but don't brown. Add additional spices. IMMEDIATELY add milk and stir constantly until ALMOST boiling- but don't allow to boil. Add cheeses and stir until melted and thick. Pour over pasta and cook on lowest oven rack for 20-30 minutes until set. Switch oven to broil and cook another 10 minutes until golden brown. The browned part is the best part that everyone fights over.
*** cooking in a clear glass dish allows you to see when the bottom of the dish is browned.
Makes 6 generous servings.
*** add browned ground beef of turkey....or even a can of roast beef just afte pouring cheese sauce over pasta to make an entree- meat is NOT taken into calorie count.
