Introduction

Number of Servings: 12

Ingredients

    1.75 cup whole wheat flour
    6 packets Truvia all-natural sweetener
    1 tsp ground cinnamon
    1 tsp ground nutmeg
    1/4 tsp baking soda
    1 tsp baking powder
    3/4 cup unsweetened vanilla almond milk
    2 tbsp unsweetened apple sauce
    3/4 cup canned pumpkin
    1 large egg
    1 cup dried sweetened cranberries (Craisins)

Directions

Preheat oven to 375 degrees F.

Grease muffin tins, 9x9 cake dish, loaf pan... whichever you like.

In a small bowl, mix all wet ingredients (including pumpkin).

In a large bowl, mix all dry ingredients EXCEPT cranberries.

Add wet ingredients to dry ingredients and mix until moist. Fold in cranberries. Distribute in your desired baking dish.

Muffins: 13-18 minutes
9x9 or 9" round: 15-20 minutes
Loaf: 30-45 minutes

    I didn't have Truvia and wasn't sure how to substitute so I used 1 T of sugar..which wasn't enough. These needed more sweetener..but I liked the combo of the rest of the ingredients. Will tweak with some additional sweetener next time. - 1/28/18

    MADE TODAY, NOT SUPER SWEET WHICH WAS FINE WITH ME. CUT 1/2 BANANA AND HONEY DRIZZLED OVER THE TOP VERY GOOD. - 1/17/10
