My mom came up with the combo of bran, oatmeal, and Italian bread crumbs, and its helped to make the meatloaf more satisfying. I especially like to add some hot sauce and then pair the meatloaf with baked mushrooms and broccoli with a side of sweet potatoes! Ingredients

    1 package (about 1 pound) of ground Turkey. I used Shady Brook Farms Extra Lean Ground Turkey.
    1 egg
    1/2 cup chopped green bell pepper (or about half a green pepper chopped)
    1/2 cup onion (or about half an onion chopped)
    1/4 cup Oatmeal (I used Quaker Quick One Minute Oats)
    1/8 cup Oat Bran (I used Old Wessex Oat Bran)
    1/8 cup Italian Style Bread Crumbs (I used Progresso Italian Style)

Directions

Preheat oven to 350 degrees.

Combine all ingredients together in a bowl and mix.

Spray a baking pan (about 4x8in) and add mixture.

Bake at 350 degrees for 45-50 minutes.

Serves 8 (115 calories per slice), or serves 6 (153 calories per slice).
