Ingredients

    1 pkg of pre-cooked Louis Rich Chicken (white, oven roasted), 4 serving
    2 large raw Carrots shredded
    1 can sliced Water chestnuts chopped
    1 sm pkg slided Almonds (about 1/2 cup)
    2 Green Onions, raw, chopped
    1 cup Iceberg Lettuce shredded
    3 slice (1 oz) Swiss Cheese cut in small strips
    3 tbsp Balsamic Vinaigrette Dressing
    2 tbsp sesame seeds
    salt and pepper to taste
    1 pkg flour tortilla, 8 inch, 8 servings

Directions

Combine all ingredients (except for tortillas) in a large bowl and toss so that all is lightly coated with dressing.

In a skillet warm tortillas (so they are easier to handle) while they are warm scoop about a 1/2 cup of chicken mixture onto tortilla and wrap like a burrito. Wrap in foil and place in 325 oven for while you are assembling the others. I left them in the oven a few minutes so the cheese could melt. Serve while warm.

    Very tasty. Good combination of flavour and textures. Due to kitchen shortages changed a couple of things. Fried my chicken from raw so I browned it with a little garlic. No sesame seeds so used hemp instead. Browned almonds as well. Added 2 sticks of celery, as well - 4/9/13

    We used this recipe because we have a couple of long evenings on the soccer field DURING dinner hour. This recipe was the perfect alternative to dining on PB&J sandwiches 2 nights a week. My husband and daughter loved it and I will definitely make it again. - 8/10/10
