Ingredients

    Pork tenderloin
    Green Cabbage
    Onion
    Red bell pepper
    Carrot
    Garlic clove
    Dijon Mustard
    Salt and Pepper
    Extra Virgin Olive Oil

Directions

Cut pork into medallions and cook in large heavy skillet in 1 T of the olive oil on medium heat. Turn once after 4 minutes and cook 3 minutes on other side. Do not let meat get dry. While cooking, you can chop all other vegetable ingredients. Remove meat from pan and set aside. Heat remaining olive oil and add all vegetables to pan. Cook until cabbage is just starting to get tender, about 10 minutes. Add meat, seasonings and mustard to pan. Stir to coat meat with mustard and vegetables. Cover and let cook on low heat for about 8 minutes. Serve in shallow bowl with a side of dark German bread.
