Ingredients

    16 oz smoked salmon
    12 slices of whole wheat sandwich bread
    2 cups plain yogurt, low fat
    1 cup of light mayonnaise
    1 cucumber
    20 asparagus spear tips, mashed

    Dill and Tabasco Sauce to taste

Directions

Flake the smoked salmon, reserve.

In a bowl, mix the yogurt, mayonnaise, asparagus tips, dill and Tabasco. Reserve.

Slice the cucumber in a mandolin as thin as possible, or use a knife.

In a pyrex oven dish, place a layer of bread, then add 1/3 of the yogurt / mayo sauce, then 1/3 of the cucumber slices, then 1/2 the smoked salmon. Repeat 2 more times, only that the final layer doesnt have salmon.

Wrap in foil and let it sit in the fridge for at least 2 hours, great if it sits for 24 hours.
