Introduction

The amount of cilantro is actually one bunch. (there was no bunch option) The amount of tomatillos is 1.5 lbs. Poblano chiles can be used instead of Anaheims. Ingredients

    Tomatillos
    Jalepenos
    Anaheim chilis
    garlic
    Cilantro
    Onions
    Oregano
    Cloves
    Vegetable broth

Directions

Remove the papery skin of and rinse the tomatillos. Cut the tomatillos in half and put them in a baking dish with 5 of the unpeeled cloves of garlic and broil until most of them are brown and toasty on the top.

Toast the jalepenos and other chiles either in the broiler or on the stove or a placa. When browned all over place in a bag to sweat for at least 10 min. Remove the skin under the faucet. Remove the seeds if you are worried about spiciness.

Chop the onions and three cloves of garlic

For a diet like the RAVE diet use some of the Vegetable broth in a frying pan and fry the onions and garlic until opaque/limp.

Put the tomatillos, garlic (with skins removed), chiles, and cilantro into the blender. I like to add the onions too but you don't have to.

Put this mixture into a pot with the oregano and the pinch of cloves.

Bring to a boil then reduce to a simmer and cook 2-3 hours uncovered stirring occasionally.

Adust salt and pepper as needed.

Serve with vegan rice and beans

This recipe is adapted from a recipe on Simply Recipes dot com. It states a 2 - 3 hr cooking time. You may not need to cook it as long because this length of time is to get the pork tender. Taste it and decide for yourself as you go along.
