Ingredients

    Pink Salmon (canned), 4.7 oz
    Egg substitute, liquid (Egg Beaters), 0.33 cup
    Corn meal, 1 tbsp
    Kirkland's Organic No Salt Seasoning, 2 tbsp
    Parsley, dried, 2 tbsp
    *Olive Oil Pam (0.5g = 0.6sec spray), 7 serving (about 1 tsp)
    Annie's Naturals Low Fat Gingerly Vinaigrette Dressing, 2 Tbsp

Directions

Use a fork to flake salmon. Lightly mix in egg substitute and corn meal until salmon has a mild crumbly texture. Stir in the no-salt seasoning and parsley. Shape salmon mixture into 3 palm-sized patties. The patties should be the thickness of a fluffy pancake

Spray Pam into a non-stick pan and use medium-high heat. Pan fry the patties for about 3-5 minutes on each side or until golden brown.

Drizzle the vinaigrette over the patties.

Makes 1 serving (3 patties).
