Very filling and only about 14 grams of carbs a muffin!The muffins are slighty heavy and not so sweet, but they are great with Move Over Butter (a whipped butter and vegetable oil spread.)

Ingredients

1/2 cup whole wheat flour (i recommend king arthur whole wheat)
1/2 cup all purpose white flour
1 tablespoon baking powder
1/2 teaspoon baking soda
3 packets Truvia natural sweetener
pinch of salt (very small amount, about 1/8 teaspoon)
1 teaspoon vanilla extract
1/4 cup Better 'n' Eggs egg substitute (roundy's egg substitute works as well)
1/3 cup Dannon All Natural Plain Lowfat Yogurt
1 cup mashed bananas
Optional (not in nutrition info):
Move Over Butter (a whipped butter and vegetable oil spread) much lower fat and calories than butter and very creamy
Directions
Preheat the oven to 350 degrees
1. Mix all dry ingredients (flour, baking powder, baking soda, Truvia, and salt) together in one bowl.
2. Mix all wet ingredients (egg substitute, yogurt, banana, vanilla extract) together in another bowl.
3. Combine the dry and wet mixtures together, if the batter is too thick, add a pinch of water (not too much!) to the mix.
4. Spoon mixture evenly into 12 muffin cups.
5. Bake at 350 degrees for 18-23 minutes or until done (check with toothpick)
