Introduction

Number of Servings: 4

Ingredients

    2 Large Chicken Breasts
    1 - 16 oz can of salsa (any kind! try new flavors!)
    1 - 16 oz can of black beans (or substitutes ones you like)
    1 - 10 oz can of diced tomatoes (add other veggies if you like)
    8 oz of fat free cream cheese
    1 packet of taco seasoning
    Fresh cilantro
    Instant Mashed potatoes

Directions

Put everything but the cream cheese and instant mashed potatoes in the crockpot.
You can use frozen chicken if you are going to cook for 8 hours or so. (I just keep an eye on mine. Tonight I'm doing it 5 hours on high and I'll see what it looks like when I come home. I'll try and take a picture to update this as well and measure how big 1 serving is. )
This crock serves 4 pretty decent size servings.

Once everything is cooked, break up the chicken so it's more like a thick stew. Add the cream cheese. Cook for 30 more minutes.

Make your side. White rice would go great to serve as a bed underneath the stew, but I'm using mashed potatoes tonight.

Serve on top of your side. Makes 4 servings. You can also play with the flavors by adding different seasonings, different beans, different salsas, and other vegetables. It's a good base recipe!
