Ingredients

    1 can Minced Clams, with liquid
    1 bottle Clam broth, 8 oz
    1 Onion, divided
    1 cup Carrots, divided
    1 cup Celery, divided
    1 med. Potato, diced
    1 sprig fresh Thyme or 1 tsp dried thyme
    1/4 cup Water
    1 Bay Leaf
    1 clove Garlic, whole
    1/2 tsp. Salt or to taste
    1/4 tsp. Black Pepper
    1 Tbsp Parsley, chopped

    Makes 2 one cup servings.

Directions

Add 1/2 onion cut in wedges, 1/2 whole mini carrots, 1/2 chunks celery, 1 whole garlic clams, clam juice, water, bay leaf and thyme to pan.
Bring to a boil, and simmer covered for 45 minutes.
Pull out veges, thyme & bay leaf & discard.
Add 1/2 cup fresh celery and 1/2 cup fresh carrot & simmer covered 25 minutes.
Add potato diced into 1/4" cubes & simmer covered 20 minutes.
Add salt if needed and a generous amount of black pepper.
Top with parsley and serve.
