Ingredients

    2 Large Potatoes (chopped)
    1 Medium Onion (minced)
    2 cans minced clams
    3/4 cup White Flour
    3/4 cup Butter
1 liter Half and Half Cream
    1 splash Cider Vinegar
    to taste Salt
    to taste Pepper

Directions

In a large pan combine the potatoes and onions; empty the clam juice from the cans into the pan (set the clams aside for later) and fill with water to cover the potatoes. Cook on medium-high heat until potatoes are tender.

Meanwhile in a LARGE saucepan melt the butter and slowly mix in flour (make sure that the butter doesn't get too hot or you might end up with dumplings). Once the flour and butter are mixed add the cream, heat over medium-high heat continuously stirring until the mixture is a bit thicker then the desired consistency. Add the vinegar, salt and pepper.
Add the potato mixture to the cream mixture and stir, once everything is evenly mixed add the clams and serve.
