    1/4 cup Sunflower oil
    1 large carrot diced
    1 Yellow Pepper
    2 medium stalks celery
    2 cloves garlic
    Juice of one lemon
    12 oz Salmon fillets
    2 medium sweet potatoes, baked
    1 cup white rice, jasmine
    2 eggs
    Panko for light coating


Makes 7-8 servings.

Bake sweet potatoes.
Saute pepper, celery, carrot and 1 clove of garlic until nice and soft.
Poach salmon with lemon juice and other clove of garlic.
Cool all. Remove skins and bones. Mush all together with hands and/or spoon. Add eggs and mix well.
Form into patties, lightly coat with panko and chill for a few minutes while the oil heats.
Fry to golden brown on both sides.
