Ingredients

    1/2 cup canned pinto beans, rinsed and well drained
    4 cups romaine lettuce
    1 cup diced fresh tomato
    2 Scallions white and green parts
    taco spices like cumin, paprika, etc
    2 tablespoons low fat sour cream
    1 tablespoon grated parmesan
    hot sauce (optional)

Directions

Makes two servings
Place the all the ingredients besides sour cream, Parmesan and hot sauce in a bowl and mix then top with the remaining ingredients.
