Ingredients

    1 can cream of tomato soup
    1 14.5 oz can diced tomatoes
    1/2 -1 cup tomato sauce (optional if you have it--even leftover marinara would work)
    1 cup chopped green pepper
    1/2 cup chopped onions
    2 cups chopped mushrooms, or two little cans
    1 teaspoon basil
    1 clove garlic
    1 teaspoon smoky Spanish paprika, or Hungarian paprika
    1/2 teaspoon cayenne, or to taste
    salt and pepper to taste

Directions

Saute the onions and pepper until the onions are transparent.. Add one clove garlic and continue cooking for 30 seconds. Add mushrooms, and spices. Cook a few minutes longer then add tomato soup, the can of tomatoes and sauce. Add about 1 soup can of water. Simmer about 10 minutes or until peppers and onions are soft. Traditionally, this soup is served over white rice.
