Ingredients

    1 cup cornmeal
    1 cup soy flour
    2 tbsp sugar
    4 tsp baking powder
    1 egg
    1 1/2 to 2 cup soy milk
    1/4 cup oil
    1/4 tsp salt

Directions

Heat oven to 425, I placed a cast iron skillet in the oven with nonstick oil while the oven was heating up.
I mixed up all the dry ingredients and then added all the wet ingredients until everything was well moist.
Then poured it all into skillet and bake for about 20-23 minutes
**you may need more or less milk I had to add quite a bit because it seemed real dry to me
It served 6 of us (2 adults and 4 kids) with each of the kids getting seconds.
