Ingredients

    2 tablespoons olive oil
    1 bag (2 cups) frozen onion and pepper mix
    2 tbsp garlic, minced
    14.5 oz can diced tomatoes, well drained
    16 eggs, whisked
    2-6 drops tobasco sauce (according to taste)
    Salt
    Pepper
    1 tsp basil
    4 ounces pepper jack cheese (or cheddar)

Directions

1 - In large skillet on medium heat, saute frozen pepper mix, garlic, and tomatoes (drained) in oil for 2-5 minutes.

2 - Whisk or blend together eggs and seasonings. Pour eggs into the skillet over the veggies. Let set 1 minute. Using a rubber spatula, scoop beneath eggs and fold over, continually until firm but still moist.

3 - Remove from heat. Sprinkle cheese on top of eggs, and cover skillet with a lid until melted.

Makes 8 servings of about 1 cup each.
