Introduction

Ingredients

    Whole pumpkin (approx. 3 kilos /3000 grams)
    1 large onion
    1/4 cup chopped fresh ginger
    1 tbsp curry powder (tightly packed)
    1 tbsp paprika (tightly packed)
    1 tbsp lemon grass powder (tightly packed)
    2 vegetable stock cubes
    1 can coconut milk
    8 cups water (2 litres)
    Salt to taste

Directions

Clean and chop all ingredients. Add everything to pot (except coconut). Bring to boil then simmer on low for about an hour (until pumpkin is soft). Blend into smooth soup and then add coconut and stir until well blended. Ready!

    This is delicious!! Very flavorful and spiced just right. The only thing I changed was the lemon grass. Used 1+ TBSP fresh lemon grass paste as I could not find the powder. Also, this made 18 cups of soup for me. I believe a serving according to the NI is about 2 cups. - 2/21/11
